Parmigiano Reggiano aged 60 months
Our 60-month Parmigiano Reggiano is aged for 5 years, a time in which it has developed decidedly unique organoleptic characteristics. Its friability is further increased, presenting an amber, grainy and mineralized paste. The flavour is strong and very intense, but never spicy (as happens with other very mature cheeses). The typical aromas of younger ages (milk, yoghurt and hay) leave space for much more complex and marked, woody, smoky, spicy and citrusy scents. Organoleptic Characteristics:
- Particularly hard and crumbly paste, with very present tyrosine.
- Hints of spices, wood and citrus on the nose.
- The flavour is strong and intense, but not excessively.
Try it paired with a good aromatic honey, seasoned cured meats, jams or balsamic vinegar. The long aging makes it perfect with quite sweet wines, such as Amarone della Valpolicella or Marsala, and with passiti (dessert wine). Also excellent with aromatic wines and spirits, such as Port or Rum.
