24-month Parmigiano Reggiano is perfect for a first tasting: it is at this age that Parmigiano Reggiano begins to express all those organoleptic characteristics that have made it one of the most consumed cheeses in the world. The perfect balance between sweet and salty and the crumbly and grainy straw yellow paste make it perfect for all traditional Italian dishes and excellent to pair with medium-bodied wines. The notes of fresh milk, which are still present, are very interesting. Organoleptic Characteristics:
- Presents numerous tyrosine crystals, high graininess and hardness.
- Hints of melted butter, hay, fresh fruit, dried fruit and nuts and meat broth.
- On a gustatory level there is a perfect balance between sweetness and flavour.
Try it paired with a good glass of Franciacorta accompanied with a pepper and balsamic vinegar cream. Also excellent with more structured wines, such as Chianti, Sangiovese or Gutturnio.
