- Compact and very crumbly paste.
- On the nose it has more developed hints, such as spices, dried fruit and nuts and hay.
- Strong, decisive and slightly pungent flavour.

Try it with a good glass of fresh Lambrusco or intense and full-bodied wines, such as Barolo or Sauternes. It is excellent to simply taste in shavings, maybe accompanied with sweet preserves and balsamic vinegars. Given its noticeable friability it is also excellent grated as a filling for fresh pasta.
