This cured meat is made with meat from the pig’s neck. Its peculiar characteristic is the “sweetness”, which requires a limited percentage of salt and the very measured use of spices that must not dominate the “scent” of the cured meat. 100% Italian certified meat from pigs born, reared and slaughtered in Emilia Romagna and Lombardy. Cylindrical and slightly elongated in shape with natural casing. When cut, the slice is compact and homogeneous. Pink in the lean parts, interspersed with pinkish white marbling.
