The Fiocco of ham, also known as Fiocco of Culatello, comes from the same part of the pig’s leg as Culatello (hence the name). It is the smallest piece of meat next to the femur. Fiocco of ham has a red/amaranth colour in the lean parts and pink/white in the mixed parts. Compact but not dry consistency.
