It is without doubt the most prestigious among the cured meats. Culatello is obtained from the rear leg of the heavy Padano pig, more exactly the larger muscular part of the deboned rear leg. The thigh, once freed from the rind and bone, is sectioned to obtain, precisely, the part destined for the production of the culatello. Appearance: red/amaranth in the lean parts and pink/white in the mixed and marbled parts.
