Sometimes called “Culatta”, Culaccia is in fact made from the same part of the pig as Culatello, that is the highly-prized, prime part of the leg. The difference lies in the fact that it is left with two fingers of fat under its natural rind and with the “anchetta”, a small shell-shaped bone, which serves to protect the product during its long aging. It is produced and smoked as if a ham and, in the end, it is very sweet and rich in aromas.   APPEARANCE: sliced culatello with rind has a red/amaranth colour in the lean parts and pink/white in the mixed and marbled parts.
