The authentic name of this extraordinary typical product, “Salame Felino”, refers to the geographical area of ​​the Province of Parma where the town of Felino is located, from which it historically originates. It is important to underline that the raw ingredients consist of pork strictly born, reared and slaughtered in Italy. Throughout Emilia-Romagna, and also in other regions, a salami commonly called “Felino type” salami is prepared. Felino Salami is prepared with pure pork, carefully selected. It has more protein and less fat than other salami of a similar type. Traditionally, it is cut diagonally thus creating oval slices, approximately double the length of the diameter of the salami. Felino Salami is distinguished from other products of the same product category for its compactness and non-elastic consistency, for its homogeneity and thinness, and for its ruby ​​red colour. The flavour is sweet and delicate. It is a salami that, unlike the vast majority of those on the market, is stuffed exclusively in natural casing.
